[nSLUG] chroot failing to run shell, fixing grub2 on GPT

I've taken some notes on exactly what happens with a Debian rescue, using
7.5 unofficial net install CD with firmware (needed for bnx2 net
interface)...

Advanced menu selected, then rescue.

Reinstall grub selected with /dev/sda.  Fails.
error in console VT is:

grub-installer: chroot: can't execute 'grub-install' : no such file or
directory

Selected "Execute a shell in /dev/sda1" - does nothing - comes back
to the Debian rescue menu

Selected "Execute a shell installer environment"
/target is mounted already, so I enter:

chroot /target

chroot: can't execute '/bin/sh' no such file or directory
