Arduino (http://www.arduino.cc/) might be worth a look if you're 
interested in the DIY route. There are various different types with 
different types of connectivity (USB, Bluetooth, serial) but the big 
selling point is its IO; both analog and digital IOs are copiously 
provided for, so you can trip relays and measure thermistors as required.
