Postfix supplies a sendmail wraper that's a drop-in replacement for
the sendmail binary that's part of... er... Sendmail. Don't confuse
the two, Sendmail is the entire package, sendmail is just an
interface.

The sendmail binary/wrapper/whatever has to be present when PHP is
compiled.

If you've got the wrong timeline in your email (ie you uninstalled
exim, built php, installed postfix), try recompiling PHP. Make sure
you clear the configure cache and re-run it.

You might as well do that anyway, keep an eye out for errors during
sendmail detection.
