  1.)
    Some samples from the mail log:

-Trying to send to Hotmail

2.)
  I am using the SMART_HOST function in Sendmail to relay through 
"smpt.eastlink.ca".

  Something that springs to mind is this.  I followed a how to on 
SMTP-AUTH 
(http://www.linuxquestions.org/questions/answers.php?action=viewarticle&artid=269), 
and thus I wonder if this may have fouled things up somewhat?
